7 Layer Dip (Mexican)

I made this recipe for a recent board games night at a friend’s place.

Ingredients (bottom to top):
Layer 1:
1 can of black beans (rinsed)
1 tablespoon of Taco (or fajita seasoning)
Salt & Pepper
1/2 Lime Juice
1 teaspoon of olive oil

Method:
Add all ingredients and microwave for 2-3 minutes. Cool it and layer on the bottom of the baking dish.

Layer 2:
Sour cream

Method: Spread it equally on the beans layer.

Layer 3:
1 cup cooked rice
1 teaspoon of olive oil
1 tablespoon of taco seasoning
Salt and pepper

Method:
Microwave all, cool it, and spread it on sour cream layer.

Layer 4:
2 ripe avocados (mashed)
1 lime juice
1/8 cup of onions (chopped)
Salt and pepper
1 teaspoon of olive oil

Method:
Mix and spread it on rice layer

Layer 5:
1 cup store bought salsa
2 ripe tomatoes (chopped and deseeded)
1/4 cup onions (chopped)
1/2 jalapeño (deseeded and chopped)
Cilantro
1/2 lime juice
Salt and pepper

Method: mix all and cover all the guacamole. This will prevent guacamole change its color.

Layer 6:
1/2 cup Shredded Mexican cheese

Layer 7:
10-12 pitted Olives (chopped)
1 spring onion (chopped)
Cilantro
Pickled Jalapeños (chopped)

Spread it and garnish with wedges of lemon or lime.
