Spanish Garlicy Rice with Black Beans – Chunky Salsa – Broccoli & Onion Cheese Quesadilla

Well… Mexican food is always appreciated in my household. My husband and I love all kinds of cuisines  but Mexican food has a special place in our hearts.

1. Spanish Garlicy Rice:

I tasted this recipe at Salsa Mexican Restaurant in Newport News. Well, it was not on the menu, but they made us taste their specialty and now it is our all time choice.

We need:

1 cup of Spanish Rice or any short grain rice (cooked with a pinch of saffron)

3 tablespoons of taco seasoning

6-7 garlic cloves (chopped)

Spices like 1/2 teaspoon of cayenne pepper, 1/2 teaspoon of turmeric, 1/2 teaspoon of smoked paprika.

1 can of black beans (drained & washed)

2 tablespoons of olive oil

Salt & Pepper

Method:

Add oil, garlic, seasonings, black beans, and cooked rice. Serve hot.

 

2. Chunky Salsa:

Ingredients:

1 avocado (chopped)

1/2 large mild onion

3 tomatoes

1 jalapeno (chopped with or without seeds)

cilantro

1 lime juice

salt & pepper

Method:

Add all the and mix well with a fork. Keep it chunky!!

 

3. Broccoli & Onion Cheese Quesadilla

Ingredients:

Veggies like Broccoli & Onions (or asparagus as my earlier post)

olive oil

salt & pepper

red pepper flakes

tortillas

shredded cheese (Mexican style, mozzarella, or pepper jack cheese)

Method:

Cook veggies with olive oil, red pepper flakes and salt & pepper.

Take a panini grill or normal pan.

Heat up the tortillas well.

Add layers of cheese, veggies, again cheese, another tortilla.

Grill it on medium heat. Make it crispy.

Cut with pizza cutter

Serve with salsa & Spanish rice. ImageImageImageImage
