Grilled Artichokes with Garlic

I prepared this recipe specially for Halloween. It looks weird, but tastes great.

Artichokes are one of my husbands favorite vegetable. Now I can say mine too. I use store bought artichoke hearts in marinate and without marinate. It also comes in frozen form. All of them are absolutely fine.

Cutting fresh artichokes is little tricky, but sharp knife can ease out the process.

There are few steps for cutting artichokes and removal of chokes. I followed this YouTube video for cutting them.

This recipe was inspired by Giada on Food Network.

2 extra big artichokes
7-8 cloves of garlic
2 lemons
1/4 olive oil
1 tablespoon butter
Salt & pepper

Cut the artichokes as shown in the video.

First step:
I boiled water with lots of salt & cut lemons (just not the lemon juice)
Add artichokes and close the lid
Let it boil and cook. Once the artichokes change color and soften.

Second step:
Remove artichokes from boiling water and drain them. Remove all the chopped lemons.

Third step:
Add olive oil, butter, and chopped garlic.
Add artichokes and grill them for 3-4 minutes.
Serve with my Greek yogurt dipping sauce.

Greek yogurt dipping sauce:
1. 5 tablespoon of Trader joes Mediterranean Greek Yogurt Dip (shown in pictures)
2. 1/2 cup of regular yogurt
3. Salt and pepper
4. Add hot sauce (optional)

Add all the ingredients and serve with artichokes.
