Vietnamese Fresh Spring Rolls

We need:

Rice paper
Rice noodles thin or rice vermicelli,
Lettuce
Carrots (thinly sliced)
English cucumbers (thinly sliced)
Thai basil (from my garden)
Spring onions (chopped)
Add tofu (optional)

Serving sauce:
Sweet and spicy chilly sauce
Or Thai peanut sauce

Preparation:
Cook rice noodles as per instructions on the package. Drain and cool them in chilled water. Add drop of oil to avoid them from sticking.

Keep all veggies, noodles, paper towels side by side.

Preparation of rice paper. In a casserole pour some hot water. Now dip the rice paper completely for few seconds and put them flat on little damp paper towels.

Now add your veggies shown in the picture below. Wrap it as a burrito.

Serve chilled with sweet chilly sauce or thai peanut sauce & peanuts.

If you want to prepare them ahead of time then make them, cover them with damp kitchen paper towels, and refrigerate.
