Well after trying sushi making for a few times, I got this recipe right. Sushi-making is surely an art and the key is perfect sushi rice.
Note: To avoid making sushi rice ask any of the local Japanese restaurants to provide you some already cooked rice. Just like pizza joints can provide ready made pizza dough.
1 cup sushi rice (I washed it and soaked in water for 3 hours) (brand from Asian store)
1 and 1/4 cups of water
Cooked it in your microwave for 8 minutes (depends on your appliance) and checked if the rice is cooked through. It should neither be mushy or tough, but it should have a perfect consistency.
1/8 cup of sushi vinegar
1 tablespoon of sugar
1 teaspoon of salt
Mix the seasoning in the rice when they are at almost room temperature.
- Use Microwave method, as it would not let the rice stick on the bottom of the pan. I have tried cooking it on the burner and trust me I have failed twice. So when you are trying this for the first time chances are that you wouldn’t easily mess up using Microwave.
- Let the rice sit uncovered and cool it completely before using. The cooling process will keep cooking the sushi rice in its own vapor. So don’t cover it or it will definitely lose its texture and will become mushy.
Start making sushi,
1 nori sheet (I toasted it for few seconds) (brand from world market) sushi rice (to avoid sticking, wet your hands before touching rice)
Thinly sliced English cucumbers (julienne cuts)
Thinly sliced carrots (julienne cuts)
Thinly sliced avocado
Thinly sliced pickled radish (from Asian store)
Asparagus (blanch in hot water and soak it cold water immediately) Black sesame seeds
Now start making sushi as shown below.
Roll everything with the help of the sushi mate.
For cutting the rolls, dip the knife in water everytime before each cut. Thus, the rice won’t stick and you will get sharp & clean cuts.
Serve it with pickled ginger, soy sauce, and wasabi paste.
All ingredients remains the same, except preparing spicy mayonnaise sauce.
1 tablespoon Sambal Oelek sauce (or chili garlic sauce or little wasabi paste )
3 tablespoons of Mayonnaise
The method of folding nori is little different. It is a coned shape one with lots of spicy mayo.
