Quinoa, avocado, ripe mango, alfalfa sprout salad

Ingredients:
1 cup of quinoa
2 1/2 cups of water
1 ripe mango
1 ripe avocado
Half lemon juice
Salt and pepper
Alfalfa sprouts (optional)
3 tbsp of chopped Coriander leaves

Ingredients:
Cook quinoa according to the instructions on the box. Once the quinoa is cooled drain the excessive water. Now add all the other ingredients and salt-pepper according to the taste. Serve with coriander leaves and sprouts.
