This recipe is inspired from http://www.prohealthcare.org/wellness/recipes/bkfst-bread/banana-flax/
I have made few changes though: using 2 bananas instead of 3, using brown sugar instead of white sugar, also by adding chocolate chips.
2 medium ripe bananas (1 ½ cup mashed)
½ cup brown sugar
¾ cup skim milk
1 tsp. vanilla
1/4 cup chocolate chips (optional)
1/4 cup walnuts (optional)
1 cup all purpose flour
1 cup whole wheat flour
½ cup ground flax
1/3 cup oat bran
1-2 tsp. baking soda
1 tsp. cinnamon
Preheat oven to 350°F. Mash bananas and sugar together in medium-sized mixing bowl using a fork. Add the milk, vanilla, chocolate chips, and walnuts. Add the dry ingredients and mix smooth.
Lightly spray a 9″ X 5″ non-stick loaf pan with vegetable cooking oil spray. Pour batter into pan and bake until loaf is done – when it springs back to the touch in the center and a toothpick inserted in the center comes out clean, about 45-50 minutes.
Flax: Grind whole seeds in coffee grinder or buy milled or ground.
Oat Bran: Look for it in the hot cereal section of the grocery store.
Yield: 10 servings
