Indian Panna Cotta (Gelatin Free)

This panna-cotta recipe looks complicated, but it is really simple to make and is packed with Indian flavors.

Moreover, I like this dessert, as it looks really elegant and attractive when served in individual glasses.


1/4 cup of water

2 cups of whole milk

1/2 cup of heavy whipping cream

1 1/2 cups of China grass strands (Agar-Agar) or 3 tablespoons of China grass powder form

1/2 teaspoon of Saffron strands

1/2 cup of sugar

2 cardamom pods (seeds grounded)


Take a pan and heat up the water. Put strands of china-grass in it and let it dissolve. Dissolve them completely. It will take 15-20 minutes. 

(Note 1: China-grass is available in strands and power forms at any Indian or Asian grocery store.)

Later add milk, heavy whipping cream, sugar, grounded cardamom seeds, and saffron. Heat up and stir the entire mixture for 4-5 minutes. Now pour it into a glass baking dish and cool it down. It will start converting into jello form at room temperature.

Refrigerate the  panna-cotta once it starts setting. Cube them and serve.

Garnish: Top the panna-cotta with sliced Almonds or pistachio nuts or diced fresh mangoes. 

(Note 2: You can also set the mixture directly into tiny dessert glasses for individual servings.)
